Cajun Shrimp Boil
Serves 4
Ingredients:
500g large raw prawns (Shrimp)
4 tbsp Speedy Chef Cajun Seasoning
500g baby potatoes
3 corn on the cob, cut into thirds
200g smoked sausage, sliced into 1-inch pieces
1 lemon, cut into wedges
4 garlic cloves, smashed
3 bay leaves
2 tbsp unsalted butter (melted)
Fresh parsley, chopped (optional, for garnish)
For Boiling:
2.5 litres water
1/4 cup salt
1 lemon, halved
2 tbsp Speedy Chef Cajun Seasoning
Instructions:
In a large pot, add 2.5 litres of water, 1/4 cup salt, 2 tbsp Cajun Seasoning, halved lemon, smashed garlic cloves, and bay leaves. Bring the water to a rolling boil.
Add the baby potatoes to the boiling water and cook for about 10-12 minutes, or until just tender.
Once the potatoes are almost cooked, add the corn and smoked sausage to the pot. Cook for another 5-7 minutes, until the corn is tender.
Add the shrimp to the pot and cook for 2-3 minutes, just until they turn pink and opaque. Shrimp cook quickly, so watch them closely to avoid overcooking.
Drain the shrimp, sausage, corn, and potatoes from the pot. Discard the bay leaves and lemon halves. Transfer everything to a large serving tray or bowl.
Drizzle the melted butter over the shrimp boil. Sprinkle with 4 tbsp of Cajun Seasoning and toss everything gently to coat. Garnish with fresh parsley and lemon wedges for squeezing over the top.
Serve family-style with crusty bread, and enjoy with extra lemon and butter on the side.
